There are several ways to experience local cuisine when traveling, but two of my favorites are the spontaneous or the fastidiously researched methods. No expectations mean more surprises as you discover something that opens new flavor pathways in your brain. The drawback, of course, is that you may not come across certain culture-specific specialties at all. Thus enters the eternal debate as I get ready for any trip: to gather as much information as possible to cover every activity, food, and sight, or prepare to value the experiences I do have — even if I know I’m missing others.
